Sisterly Love

Miss Priss...already taking after her "Nonni" - handbag & heels a must! I LOVE it!!! Casey said Aubrey reminds him of me when I was a little girl. I was obsessed with high heels...okay maybe I still am :)

Cooking Light

Being the foodie I am, I'm always looking for new recipes to try and every once in awhile I come across one that is definitely a keeper! And the wonderful thing about this one is it's super easy & fast as well as very figure friendly! Always a plus in my book!! Just thought I would share it and hopefully it's one you will also enjoy!

Black Bean Burritos with Avocado


Ingredients

1/2 cup diced peeled avocado
1 tablespoon fresh lime juice
1 teaspoon olive oil
2 garlic cloves, minced
1/4 cup water
2 teaspoons ground cumin
2 (15-ounce) cans black beans, drained
4 (10-inch) flour tortillas
6 tablespoons fat-free sour cream
6 tablespoons bottled salsa

Preparation

Combine avocado and lime juice, tossing to coat.

Heat oil in a medium saucepan over medium-high heat. Add garlic; sauté 1 minute. Stir in water, cumin, and beans. Reduce heat to medium; simmer 3 minutes or until thoroughly heated, stirring occasionally. Warm tortillas according to package directions. Spoon 1/4 cup bean mixture into each tortilla. Top with 1 1/2 tablespoons sour cream, 1 1/2 tablespoons salsa, and 2 tablespoons avocado; roll up.

Yield

4 servings (serving size: 1 burrito)

Even if you don't like black beans TRY it anyway! With the cumin & olive oil the beans become more like refried beans...before this recipe I was not a big fan of black beans but now I think they are delicious! Also black beans are much better for you than refried. If you just can't do black beans then use pintos or any other kind of whole bean. ENJOY!!!

Summer comes to an end...

Oh how I love that man!

Today is Allen's first day back to school. And while we still have 9 months of school left, we definitely our way to the home stretch! This is Allen's third and FINAL year of graduate school...and school for that matter. I am so very proud of him and can't believe how far he has come from when we first met. He truly is brilliant at what he does and I'm so thankful that God has given him a talent as well as the opportunity to make his dreams come true! Allen really enjoyed working/interning over the summer with Jacobs. I know he is eager to finish up and hopefully continue working for Jacobs upon graduation. If all goes as planned & hoped for we will more than likely be moving to San Antonio sometime next spring. We are so excited for what the future may hold for us...

While this summer has been a wonderful one...so many things happened, so many new blessings (babies). I know I am glad to get the semester underway. Not to mention we are VERY excited as always for the fall- oh how we LOVE college football and the Fightin' Texas Aggies! It certainly is bittersweet to know this is our last football season here in Aggieland. This past Saturday while Allen and I were on our way to Austin- we talked about how we are so eager to move & start the next chapter in our lives but at the same time very sad because College Station is very much our home and has been for many years. I remember the day I moved to College Station and now it's so hard to imagine not being in the town in which defines so much of who we are. I believe Allen said it best "Sinton is where I'm from but College Station is where I grew up" ...it's been one awesome adventure and some of our greatest memories are in this town, I really hope we savor every minute/day of it this next year!

On a total different note (no pun intended)...Saturday we had the "privilege" of going to Austin to see Allen's mom play in her band (The Bubble Tones) at a private party in Austin. It was extremely hot but fun! Paul, Allen's cousin from Korea was also there. I always enjoy spending time with Allen's family and of course seeing baby Joe is always a treat! He is just a growing and is such an incredibly cute baby!!! It's amazing how fast they grow...

Miss Shaylee Casey is here!



We were blessed with another adorable niece on July 29, 2008, Shaylee Casey Meador. Aubrey is now a BIG sister! And Casey is now a father to 2 beautiful baby girls, "Daddy's Girls". Jen is doing great and adjusting well to having two baby girls in the house. Aubrey just loves her new baby sister and calls her "her baby". Aubrey just wants to kiss her and kiss her. Kara and I took Madyson and Maddox to Abilene to meet their new baby cousin. Madyson had such a wonderful time she did not want to leave. She also loved Shaylee and wanted to hold her all the time. It was such a special time for all of them to be together. Being an aunt is an absolute joy and honor.
